DUBAI – Hilton (NYSE: HLT) acclaimed sustainability initiative Green Ramadan has been recognized as the World’s Leading Sustainable Partnership 2025 by the World Sustainable Travel & Hospitality Awards, showcasing Hilton’s continued leadership in reducing food waste across its portfolio aligned with its Travel with Purpose strategy.
Created alongside the United Nations Environmental Programme (UNEP) West Asia, and Winnow, an AI-enabled food waste management platform, Green Ramadan was launched in 2022 across three hotels in three countries and achieved a 61% reduction in food waste. The program has now expanded to 45 hotels in 14 countries serving more than 340,000 guests during iftar and suhoor, traditional meals during Ramadan.
Where Innovation Meets Tradition
Behind these results were many moments of collaboration: chefs adjusting menus and portions, teams rethinking service models, and guests inspired to make mindful dining choices. Each participating hotel installed Winnow’s AI-enabled technology to monitor food waste throughout preparation and service. Weekly briefings helped transform insights into action.
Small but meaningful changes drove impact:
- Shifting from buffets to live cooking stations to reduce over-production.
- Offering smaller portions and plated bread service to avoid excess display.
- Introducing low-waste dishes using trimmings and surplus ingredients.
- Displaying UNEP’s “Recipe of Change” materials to encourage mindful dining among guests.
By pairing data-driven insight with behavioral science and cultural awareness, Hilton teams showed that sustainability can enhance hospitality without compromising tradition.
