LOS CABOS, MX – The final phase of Waldorf Astoria Los Cabos Pedregal’s multi-year property-wide transformation is officially complete. The extensive renovation showcases the hotel’s commitment to delivering redefined accommodations and on-property experiences to both new guests and those who have called Waldorf Astoria Los Cabos Pedregal “home” since its inception.

The completed renovation unveils a redesign of all 112 guest rooms, suites, beachfront suites, presidential beachfront suite, casitas, and villas. The new design seamlessly blends sophisticated luxury and authentic Mexican artistry through soothing lighting and decor, bright spaces that maximize comfort and functionality, a new in-room bar showcasing the resort’s artisanal beverage program, and thoughtfully-sourced decor—from textiles, sculptures, art pieces, furniture and more—all crafted by various Mexican artisans. The completed renovation also unveils refreshes to the Beach Club Restaurant, adult pool, and the Salon at the Waldorf Astoria Spa, as well as enhancements to their culinary, wellbeing, and destination programming.

Spearheaded by the original designer of the beachfront resort, Paul Duesing, the refined enhancement of Waldorf Astoria Los Cabos Pedregal introduces modern influences while staying true to the iconic and authentic Mexican design and cultural heritage that guests have come to love about the property. All 112 new guest rooms, suites, beachfront suites, presidential beachfront suite, casitas, and villas feature a lighter, neutral color palette and calming hues contrasted with deep, warm accents to add depth and richness. The new rooms also feature custom furniture and accessories made by a variety of Mexican artisans from Oaxaca, Baja California Sur, Jalisco, and more, as well as an impressive collection of art featuring prominent Mexican artists such as Cinthya Navarro, best known for her canvas work with acrylic, and multidisciplinary artist Tanya Talamante, whose mural can currently be found on property at Neutral Coffee Lab. The centerpiece of each room is undoubtedly a signature metallic sea turtle shell, handcrafted by Preciado Iluminacion from Jalisco, proudly displayed above each bed. This striking piece pays homage to the resort’s cherished symbol: just as sea turtles journey back to their birthplace, so too will guests always find their way home to the resort.

The multi-year property-wide transformation brought several culinary enhancements to the legendary resort over the years – such as the debut of the Agave Study at Peacock Alley, Neutral Coffee Lab, a refresh of the property’s signature restaurant Don Manuels, and the introduction of TRAVESÍA, a nine-course tasting menu all surrounding the beloved taco. The resort also introduced its multi-day, culinary weekend series, Festival of Flavors, which has featured a legendary lineup of The World’s 50 Best Restaurants, James Beard and Michelin-star-honored chefs–such as Jaime Pesaque, Michael Mina, David Yoshimura, Claudette Zepeda, and more–who visited the property to collaborate and cook alongside the resort’s executive chef, Gustavo Pinet, and his impressive culinary team to create an intimate gastronomic three-day culinary extravaganza. The resort will continue hosting the Festival of Flavors in 2026 with a fresh roster of globally known chef collaborations. This first Festival of Flavors in 2026 took place from February 12-15 in collaboration with Chef Iñaki Aldrey Teruel of Atempo Restaurant in Barcelona, and the next weekend event is taking place from April 30-May 2 in collaboration with Chef Sheyla Alvarado of Lunario, a two-Michelin-star restaurant in Valle de Guadalupe, Mexico.

The final phase of the renovation welcomed the resort’s signature Mar y Leña Steak Night (meaning “sea” and “firewood”) at the refreshed Beach Club Palapa, part of the Beach Club Restaurant refresh. The oceanfront culinary journey features a Baja-inspired menu of premium cuts grilled on several wood types, such as mesquite, pecan, and binchotan, to deliver distinct flavors and aromas. The dining experience is complete with a curated wine list showcasing the property’s private label, Pedregal Collection, which is led by the resort’s Wine Director Jhonatan Adame and created in partnership with boutique Mexican wineries, Roganto and Don Leo, and a selection of additional wineries around the world, to offer everything from an elegant Prosecco by Bortolomiol in Valdobbiadene, Italy, to a robust Super Tuscan from Tuscany, crafted by Roberto Cipresso. Mar y Leña also features signature cocktails infused with smoky notes and wooden accents, live music, coastal breezes, and the glow of open-flame grilling.  

Additionally, the Beach Club Palapa has launched a decadent Sunday Brunch program that starts with a refreshing welcome drink before guests indulge in a vibrant journey of flavors across curated food stations—from ocean fresh seafood and sizzling creations from the parrilla, to handmade tortillas from the comal, colorful garden vegetables with artisanal dips, and a sweet finale of seasonal fruits, pastries, and churros. Guests can also expect a weekly surprise-and-delight food station that will rotate dishes, from Paella, al pastor tacos, poke bowls, fish and steak skewers, and more, as well as new wine offerings each week from a list of renowned wine partners. The menu also features craft cocktails and mocktails, specialty coffee beverages from Neutral Coffee Lab–from cold brew to Café de Olla, a traditional Mexican spiced coffee, and more–cold-pressed juices, and more – all to be paired with the ambience of a live DJ and ocean views.

El Farallon’s Champagne Terrace now offers a new daytime, cliffside ritual for lunch called Savor the Sea. Savor the Sea offers a champagne and seafood pairing experience, boasting a collection of the world’s finest champagnes, along with local Baja seafood from caviar and catch-of-the-day sashimi, to a selection of cold shellfish plates like Baja oysters, sea scallops and black abalone, king and snow crab, red lobster from Punta Abreojos, blue shrimp and more, which is also offered in combination through a menu of seafood towers. Savor the Sea is available from 12:00 pm for lunch and is offered through the evening until 11:00 pm. 

To make Savor the Sea and all other dining experiences on-property even more exceptional and authentic to the resort, Waldorf Astoria Los Cabos Pedregal has introduced two new wines to its established private wine labelPedregal Collection. The first is a white Champagne–a non-vintage 100% Chardonnay Blanc de Blancs that is a masterfully crafted expression of the Vindey and Montgueux terroirs. Having undergone an extensive four-year aging process and finished with a precise extra brut dosage of 2g/L, the wine strikes a sophisticated balance between vibrant fruit and a refined, gourmand character. On the nose, it offers fresh orchard fruits and delicate white floral notes, while the palate reveals a smooth, pleasing roundness that beautifully reflects its unique origins. The second addition is a rosé Champagne, which is a blend of pinot noir and chardonnay. The non-vintage rosé is a vibrant tribute to the Vindey terroirs in Montgueux. After three years of aging and a crisp extra brut dosage of 2g/L, the wine emerges with an expressive aromatic profile defined by red fruits like raspberries and red currants. The palate is both lively and well-balanced, featuring a bright acidity that elevates its refreshing character and makes for a sophisticated, high-energy finish. Guests can enjoy these wines across all dining outlets at the resort, and can even purchase a bottle of their own to take home.
