The new signature restaurant blends bold Peruvian flavors in a striking, design‑forward setting

LOS ANGELES, Calif. - Zampo, the new signature restaurant at Cameo Beverly Hills, LXR Hotels & Resorts, has officially debuted, bringing a vibrant dining destination to Beverly Hills inspired by the creative pulse of the property. Named after the Peruvian woodwind instrument, the zampona, Zampo celebrates the vibrant flavors and traditions of Peru through a contemporary and creative lens. The restaurant’s influence draws inspiration in part from Yma Sumac, the iconic Peruvian born singer and fashion icon who lived near the property during Hollywood’s golden age and helped introduce Peruvian culture to an international audience. Her legacy serves as a fitting reference point for honoring Peru’s rich culinary heritage while embracing innovation.

At the helm of Zampo is Sean Gebo, executive chef of Cameo Beverly Hills, who brings experience from Southern California’s upscale hospitality scene, including Balboa Bay Club in Newport Beach, as well as executive roles at Renaissance Newport Beach. At Cameo, he worked closely with management and F&B teams to help shape Zampo’s modern Peruvian direction, with an emphasis on refined yet approachable flavors.

Open for breakfast, lunch, and dinner, Zampo offers a day-to-night dining experience for both hotel guests and locals. The lunch and dinner menu highlights a broad range of dishes, from bright, citrus-driven crudos and cebiches to grilled meats and seafood. Standout starters include traditional sea bass cebiche, tiradito with ají amarillo and lime, and yellowtail crudo. Among the mains, the restaurant spotlights classics such as Lomo Saltado, a stir-fry dish with prime beef, rice, and shoestring fries, along with other standouts like grilled octopus, Ají de Gallina, and jalea mixta, a mixed seafood fry rooted in Peruvian coastal cooking.

Breakfast at Zampo brings a refined yet indulgent start to the day, blending classic comforts with Peruvian-inspired touches. Highlights include cinnamon-crusted stuffed French toast with seasonal fruit, sweet cream pancakes with citrus and berry compote, and a range of egg-driven classics from omelets and Benedicts to a Peruvian sweet potato hash finished with ají amarillo. The morning menu also features elevated breakfast sandwiches and wellness-forward elixirs like hydrating chia seed water and a nutrient-packed green juice.

At the heart of the lobby, Silhouette serves as the hotel’s vibrant all-day gathering place, offering globally inspired small plates designed for sharing alongside a cocktail program grounded in craft and creativity. Complementing the food at both Zampo and Silhouette, the beverage program is rooted in pisco and Latin American flavors, highlighting fresh, expressive profiles through house-made tinctures, reductions, and syrups. Standout signatures include the house-made Chicha Morada, inspired by the traditional Peruvian beverage, along with Maracuyá and Tamarindo sours.

“We wanted the cocktail program to feel as thoughtful and expressive as the food,” said Jelena Peric, Director of Food and Beverage, Cameo Beverly Hills. “Pisco is at the heart of the menu, but we’re using it as a canvas, building layers of flavor to create drinks that feel both playful and precise. It’s a program designed to invite discovery.”

Designed by Premier, Zampo’s interiors are defined by vein-cut travertine, textured terrazzo, warm wood tones, and amber-toned Rojo Alicante marble. Handcrafted ceramics and a custom mural wallcovering by California-based artists Zoe Derring and Thomas Harrison add warmth and texture, balancing clean lines with organic forms and natural color.

Special Pop-Up Event with World's Best 50 Bar, Sastrería Martinez at Zampo

To mark the opening season of Cameo Beverly Hills, Zampo will host an exclusive one night only pop up on Saturday, April 11 bringing together modern Peruvian cuisine and boundary pushing mixology. The evening will feature  a selection of Zampo small plates designed for sharing, paired with cocktails by Diego Macedo of Lima‑based Sastrería Martínez, ranked No. 33 on The World’s 50 Best Bars list. Reservations for the pop-up event are required and can be booked here.

Celebrated for its experimental, ingredient‑driven approach, Sastrería Martínez draws inspiration from Peru’s diverse landscapes—from the coast and highlands to the jungle—crafting cocktails that are immersive, expressive, and deeply sensory. Each drink is conceived as a bespoke creation, positioning mixology as an art form in its own right.

As part of the experience, Hilton Honors members will be invited to bid to participate in an intimate cocktail masterclass led by Sastrería Martínez founder and master bartender Diego Macedo, offering a rare opportunity to engage directly with one of the most distinctive voices in contemporary cocktail culture.

As the night unfolds, guests are invited to continue the celebration at The Silhouette, the hotel’s signature lobby bar, which will serve as the official after‑party destination, featuring DJ music and a vibrant late‑night atmosphere.
