Waldorf Astoria Edinburgh – The Caledonian is located in the heart of Edinburgh, Scotland, and is steeped in hundreds of years of royal history. Housed inside a former Victorian-era railroad station, the hotel offers views of Edinburgh Castle, and is within walking distance to The Royal Mile (that leads to Holyrood Palace) and Princes Street Gardens.
Another important part of Scottish history—the drinking of gin—can be savored inside the hotel as well.
Although Scotland is well-known for whisky, gin has been a popular staple in Scottish bars—and the country is currently a leading producer of the spirit that’s experiencing a boom.
Gin’s popularity first spread through Scotland in the 1700s. With the spirit in high demand, gin production created a bevy of jobs in everything from glassmaking to distillation to warehousing. Today, more than 70% of gin made in the United Kingdom is produced in Scotland, including some of the world’s most well-known brands.
In the video below, Matthew Swan, assistant food & beverage manager, Waldorf Astoria Edinburgh - The Caledonian, shows the steps required to make The Ruby, one of the cocktails currently featured on The Caley Bar’s Icons menu.
