SINGAPORE - Waldorf Astoria Xiamen’s Chinese restaurant HOKKLO has been awarded a prestigious one Michelin star in the 2025 Fujian Michelin Guide, adding another culinary gem to the Waldorf Astoria Hotels & Resorts portfolio.
The name HOKKLO - or Xian Cheng - originates from the Hakka dialect of the Fujian region, where Xian represents the freshness of the seafood delicacies from the mountain, and Cheng symbolises traditional Fujian culinary methods. HOKKLO reinterprets authentic Fujian flavors with a modern twist, blending time-honored cooking techniques with contemporary presentation. Boasting an eclectic menu, the restaurant invites guests to indulge in a refined yet uncompromising approach to Fujian cuisine, crafted using the freshest sea and farm-to-table ingredients. Renowned chefs deliver an immersive dining experience with live cooking and tableside services, providing a visual feast alongside culinary delights.
This is the first time that the Michelin Guide is celebrated in Xiamen, and HOKKLO’s prestigious Michelin star is a testament to Waldorf Astoria's rich culinary heritage with innovative inspirations, creating unparalleled fine dining experiences tailored to guests’ unique preferences.
At the helm of HOKKLO is Head Chef Guojin Du, a Quanzhou native from southern Fujian, who has carved out a remarkable culinary career spanning over twenty years. Chef Du brings rich Fujian tradition to life at HOKKLO, combining ancient cooking style with innovative flair using local ingredients to create dishes that delight the senses and showcase Waldorf Astoria’s exploration of Fujian culture.
Alongside the remarkable accolade that HOKKLO has earned, other culinary concepts across Waldorf Astoria Hotels & Resorts that have similarly achieved a Michelin-star include Zijin Mansion at Waldorf Astoria Beijing and Ling Long at Waldorf Astoria Shanghai on the Bund, taking the brand’s longstanding track record of culinary excellence and commitment to personal service to the next level.
Zijin Mansion, Waldorf Astoria Beijing
Since being listed in the 2021 Beijing Michelin Guide, Zijin Mansion has consistently retained its Michelin star for five consecutive years, now recognized again in the 2025 Beijing Michelin Guide.
Decorated with vibrant, traditional Chinese aesthetics, the restaurant features stunning canary-themed paintings that celebrate the beauty of all four seasons. Executive Chef Wang Chunzeng crafts authentic Cantonese dishes by combining seasonal ingredients with local culinary culture, preserving traditional techniques while innovating with refined craftsmanship.
Ling Long, Waldorf Astoria Shanghai on the Bund
Located in the iconic Waldorf Astoria Shanghai on the Bund, Ling Long proudly holds its Michelin star in the 2024 Shanghai Michelin Guide. Under the leadership of Chef Jason Liu, Ling Long redefines modern Chinese fine dining, using local ingredients to create an innovative culinary narrative.
The restaurant’s décor reflects traditional Confucian and Taoist aesthetics, featuring bold red and black tones juxtaposed with contemporary Chinese calligraphy-inspired art. This concept of “fusion” resonates with the restaurant’s innovative and visually stunning dishes.
