Reduce and Reuse: Tackling the Global Food Waste Challenge

Globally, one third of all food goes to waste – equating to approximately 1.3 billion tons every year. In a bid to help tackle this challenge, Hilton has committed to reducing food waste sent to landfill by 50%.

Hotels across the world have designed innovative solutions to reduce waste and reuse leftovers as much as possible.

Chefs at Hilton Dubai Jumeirah use Winnow, a technology to track avoidable food waste accurately. Based on the results, they can adjust what and how much food the hotel produces. The hotel also does everything it can to tackle surplus food. For example, pastries left over from the breakfast buffet are repurposed into a local Arabic dessert, Om Ali. 

Elsewhere in the world, Rome Cavalieri, A Waldorf Astoria Resort has launched an initiative which sees the hotel’s leftover bread turned into beer. In partnership with Equoevento, a non-profit organisation in Rome, the hotel distributes its unused bread to local brewery, Birrificio Vale la Pena.

Birrificio Vale la Pena employs prisoners as part of a work release programme. The prisoners use surplus bread to ferment a variety of beers. The beers are available for purchase at Rome Cavalieri’s Tiepolo Lounge and Terrace, as well as to enjoy as part of the hotel’s Sunday Brunch.

The new initiative helps to eliminate waste and reduce energy consumption. The hotel estimates that the 160kg of bread repurposed by Equoevento to brew the RecuperAle beer results in CO2 savings of 140.8 kg and the equivalent of €50 of energy saved.
