Cabernet Braised Beef Short Rib with Charred Green Tomato Salsa

The cabernet braised beef short rib with charred green tomato salsa on the menu at Herb N’ Kitchen at New York Hilton Midtown is served with a green tomato salsa.
According to Peter Betz, director of culinary, “on a cold, rainy day, there’s nothing more comforting then a warm, tender plate of short ribs with rich, bold flavors.”
Ingredients
- 2 tbsp canola oil
- 4 lbs beef short ribs (4 portions)
- 1 cup onion (diced)
- 1 cup carrot (diced)
- 1 cup celery (diced)
- 2 tbsp tomato paste
- 1 head of garlic (cut in half from side to side)
- 2 ½ cups cabernet sauvignon or pinot noir
- 2 ½ cups beef stock/broth (low sodium, you can adjust seasoning)
- ¼ bunch fresh thyme
- 2 tbsp tomato paste
- Salt and pepper
- For the Charred Green Tomato:
- ¾ cup diced green tomato
- ¾ tablespoon canola oil
- ½ Chipotle pepper
- 4 sprigs cilantro (chopped)
- 2 tablespoons vidalia onion (chopped)
- Salt & pepper to taste
Directions
- Pre-heat oven to 350 degrees
- Season short ribs with salt & pepper
- In a heavy bottom ovenproof pan with straight sides, heat a small amount of canola oil & brown the ribs thoroughly all over
- When you are done browning the ribs, pour off most of the fat, leaving 1-2 tablespoons
- Brown the garlic in the remaining fat (cut side down in the pan)
- Add the onions carrots and celery and cook
- Add the tomato paste and stir thoroughly
- Add the red wine to deglaze the pan and reduce the wine all the way down
- Place the ribs back in the pan
- Add the beef stock to cover the ribs
- Add fresh thyme
- Cover the pan with foil
- Cook the ribs 3-4 hours until very tender (test by inserting a skewer and removing without any resistance)
- Remove from oven and serve with charred tomatillo, sautéed spinach and whipped potato
- For the Charred Green Tomato:
- In a small heavy bottom pan, char the tomatillos (small amount of oil)
- Remove from heat and pour into food processor or blender
- Add all remaining ingredients into the food processor and pulse quickly to combine
- Pour into bowl and adjust seasoning
- Serve on top of beef short ribs
